Omelette with spinach and salmon

Ingredients for 1 person
– 2 eggs
– 1 teaspoon olive oil
– 60 grams spinach
– 30 grams Cherry tomatoes
– 50 grams smoked salmon
– pinch salt and pepper


Beat the eggs in a bowl. Wash the cherry tomatoes and cut them in half. Heat the oil in the frying pan. Add the cherry tomatoes. Wash the spinach and add it to the cherry tomatoes. When the spinach has wilted, add the beaten eggs. Season to taste with salt and pepper. Cook the omelet over medium heat until the top is no longer translucent. Cut the salmon into small pieces and add it. Tip: Do you want to have baked the salmon before? Then add it sooner. Put it all on a plate and enjoy!
