Spicy cold cucumber soup

Ingredients for 4 persons
– 1 hand of fresh coriander
– 1 cucumber, cut into pieces and peeled
– 200 g of leaf spinach
– 2.5 el Thai green curry powder
– 2 cm of peeled fresh ginger
– 1 can of coconut milk
– 4 tablespoon of fish sauce
– 1/2 red pepper, cut into rings
– 3 tsp lime juice
– 125 gr of bean sprouts

 

Preparation method
1. Put the stalks of the coriander with half the coriander leaves in a blender together with the cucumber, spinach, curry powder, ginger, coconut milk, fish sauce, pepper and 250 ml water and puree until smooth.
2. Season to taste with the lime juice and let the soup in the refrigerator cool down in about 1 hour.
3. Pour the soup into 4 bowls and spread the bean sprouts and the remaining coriander leaves.
This is really a super tasty and healthy soup, very easy to prepare and ideal for working days as lunch or on weekends as dinner!
