Boost soup

Ingredients for 3 persons
– 1 onion
– 2 bunch onions
– 2 stalks of celery
– 2 carrots
– 1 zucchini
– 1 clove of pressed garlic
– 2 leaves of pak choi
– 250 grams of broccoli florets
– 1 tablespoon of olive oil
– 1.5 liters of water
– 2 cubes of organic vegetable stock
– 4 tablespoons of finely chopped parsley

Ingredients
1. Cut all vegetables into cubes, except the bok choy and the broccoli florets.
2. Cut the bok choy into strips and divide the broccoli into small florets.
3. Fry the onion, spring onions, celery, carrots, zucchini and garlic in the olive oil.
4. Add the water and the bouillon tablets and bring to the boil.
5. Cover the pan and simmer for 5 minutes.
6. Add the bok choy and the broccoli and simmer for 5 minutes.
7. Stir the parsley through the soup.
8. Cover the pan again and remove the pan from the heat.
9. Let the soup run for two minutes and serve immediately.

This soup tastes good at any time, but especially when you are not feeling well and want to eat something warm and calming. Enjoy your meal!
