Breakfast burrito with ham

Ingredients for 1 person
– 3 slices of ham (thick enough to roll the vegetables in)
– 2 (organic) eggs
– 60 grams of chopped vegetables of your choice (such as spinach, olives, tomatoes, onion, etc.)
– Coconut oil or extra virgin olive oil
– Pepper and sea salt
– Optional: lemon juice and fresh coriander

 

Preparation method
Heat 1 tbsp oil in a frying pan. Add the vegetables and fry them lightly brown. Break the eggs over the vegetable mix and stir until the eggs are done. Season with pepper and sea salt. Divide the egg-vegetable mix over the slices of ham and roll up to a burrito. Fry the ham rolls for a few seconds on each side until it turns light brown.
Optional: drop some lemon juice over the burrito and serve with coriander leaves.
