Greek Chickensalad

Ingredients for 2 persons
– 1 chicken fillet
– 2 cloves of garlic
– 1/2 cucumber
– 1 cooked beetroot
– 2 tomatoes
– 2 tbsp large green olives
– 1 handful of parsley and mint leaves
– large dash of (Greek) olive oil
– sea salt
– black pepper

 

Preperation method
Cook the chicken breast in boiling water with salt and 2 peeled garlic cloves, this will take about 10-15 minutes. Allow the chicken fillet to cool slightly on a small shelf. In the meantime, cut the cucumber into thin half-moons, the red beet and tomato into cubes and the olives into pieces. Put this together in a bowl. You pick the chicken fillet into pieces and this also goes into the bowl. Finely chop the parsley and mint and scoop through the rest. Finally, make the salad with olive oil, salt and pepper.

Tip: a little more spice in your salad? Then you can also mix a sliced whole or half red onion.

Just a very nice salad with chicken. A bit Greek oriented, hence the name. Just a little different by the addition of red beet. You can also go in all directions. Eat it as a light evening meal and keep the leftovers for lunch the next day.
