Eggplant with bruschetta topping

Ingredients
– 1 eggplant
– 250 grams of tomatoes
– leaves of fresh basil
– 2 tablespoons of parmesan cheese
– pepper and salt
– a dash of olive oil

 

Preparation method
Cut the tomatoes into small pieces and put them in a bowl. Mix it with olive oil, finely chopped basil, pepper and salt. Then cut the aubergine into slices and put some olive oil on it. Then you heat a grill pan and grill the aubergines until nice stripes appear. Then place them on a plate and add some tomato mixture. Garnish it off with a basil and cheese for a nice result.
